OUR STORY
Olivero founder and owner Sunny Gerhart and co-executive chef Lauren Krall Ivey have created an experience that is INSPIRED BY FAMILY. ROOTED IN FLAVOR. CRAFTED IN WILMINGTON.
Serving dishes awash in flavor from Sevilla, Sicily, Tangier and beyond, Chef Sunny Gerhart weaves together an experience that tastes like travel, but feels like home.
He draws from his family history - back to, and beyond our namesake: his great grandfather, merchant sailor Jose Olivero, to his childhood in New Orleans, and his life as a constant student, a curious cook, and gifted chef.

Stories of Gerhart's great-grandfather sailing from Spain to New Orleans bring flavor to his imagination. "He traveled around North Africa and those Mediterranean and North African and even a little bit of Middle Eastern influences melded in.”
From the custom-ordered Arcobaleno pasta extruder to the large wood-fired grill that occupies a full corner of the open kitchen, attention to detail is paramount and taste reigns supreme at Olivero.
Whereas Gerhart's sister restaurant St. Roch, in Raleigh, NC is a very specific ode to his Louisiana background, Olivero is a second act that really weaves all of the threads together into one culinary tapestry.
